Try on sourdough toast for an extra treat, or scramble your eggs for a variation, however you like yours, always drizzle with balsamic to finish.

Shopping List

2 small avocados

4 slices of bread

150g goats cheese

4 eggs

2 tbsp Mazzetti Balsamic Vinegar of Modena

Salt & pepper for seasoning

  • Step 1.

Peel, halve and remove the stone from the avocados. Thinly slice them.

  • Step 2.

Toast the bread slices. Spread the fresh goats cheese on top and add the avocado slices.

  • Step 3.

Poach eggs for 3-4 minutes in boiling water.

  • Step 4.

Place the eggs on top of the avocado and drizzle generously with Mazzetti Original Balsamic Vinegar of Modena. Season to taste.
